OWNER GONZALO CEMBRERO

Cembrero first came to America from Palencia, Spain in 1994 as a high school exchange student. He lived in Irwin for about a year and kept in touch with his host family after returning to Spain. In 2010, Cembrero left his successful but unfulfilling job in Spain and headed back to America to pursue his dream. The original Pallantia opened in Greensburg in 2011, but  three years later Cembrero decided to focus on the new and improved Pallantia on Ivy Street in Shadyside.

Pallantia is the place for Cembrero to share his native home with his adopted one. Many of the recipes come from Cembrero’s family. “I’m a proud Spaniard,” says Cembrero. “And I want to bring the best of my country.” Cembrero grew up helping his grandmother cook paella. Paella, originated in the Valencia region of Spain uses either bomba or calasparra rice, saffron, sofrito and olive oil combined with seafood creates a unique mix of flavors. For Cembrero, authenticity starts with ingredients. He is importing many key items from Spain, including top-notch ibérico ham, pimentón de la Vera (a smoky paprika that shows up in many dishes), Azafran, cheeses from different regions and Spanish wines that “go beyond Rioja.”

“I want to bring the real taste of Spain,” explains Cembrero. To eat tapas-style is to eat by whim, free from rules and schedules. It is meant for those who wish to enjoy life to the fullest and love to spend time with friends. Bar tables, stools and a long wall bar encourage tapas sampling and sharing, and drinking homemade sangria and other beverages, including Spanish wines. 

CHEF JUAN GONZALEZ

Juan Gonzalez is a fearless Executive Chef that hails from Puerto Rico and brings with him an impressive culinary lineage of Latin and Spanish food. He began honing his skills in some of Puerto Rico most popular hotels and restaurants including The Hotel San Juan, Pepin’s Café and Tasca. This up and coming Chef would then go on to cook to at such prestigious Clubs like Snowmass Club, Aspen Co. Ocean Reef Club, Key Largo, Fl. The Homestead Hotel 1766, VA. The Riviera Hotel, Palm Springs Ca. As well as on board of the U.S.S. Pride of America ,Hawaii. And the now Famous Barcelona Wine Bar, CT Later on he was fortunately enough to work closely under Executive Chef Alex Rosado and Corporate Chef Luis Pous at the Little Palm Island Resort in F.L. Keys.

Chef Gonzalez has become a force to be reckoned with his seasonal and local inspired combinations and bold flavors. Joining us at Pallantia to bring an authentic taste of Spain to Pittsburgh.
